Yesterday, I gave you my favorite slow cooker recipe for black beans. Today, I wanted to show you one of our favorite ways to make a quick and easy meal with these delicious black beans. It is not complicated at all. Rice and black beans, topped with salsa and cheese. That is it. Simple ingredients, but one very flavorful and satisfying meal!
I personally love using the short grain brown rice, but any rice you have on hand will work. As for the salsa, blender salsa works perfect with this dish, but there are no rules. Store-bought salsa will work too! And as for the cheese, Monterey jack is our favorite, but any cheese will work. Like I mentioned, this dish is not complicated.
Just put your favorite cooked and warm rice in the bottom of the bowl.
Put those delicious warm black beans over the rice. The slow cooker version is perfect, but you can warm up canned beans as well.
Top the beans with your favorite salsa.
And now for the final touch, add a generous helping of cheese over the salsa!

Ingredients
- 2 cups cooked rice I prefer short grain brown rice
- 2 cups cooked black beans the slow cooker version is perfect, but canned black beans will work fine
- Salsa of your choice
- grated cheese Monterey jack is a good choice
Instructions
- In individual bowl, put the warm cooked rice in the bottom of the bowls. Add the warm black beans over the rice. Top the beans with salsa. Add the cheese on top of the salsa.
