Couscous is such an easy ingredient to to work with. It is versatile and cooks up quickly. This side dish is an example of how quickly you can make a delicious side dish, yet it looks like it took more than just the 10 minutes it really takes to come together.
Couscous with buttery pine nuts and green onions is such a delicious addition and adds a slights touch of elegance to your meal.
Couscous With Pine Nuts
A delicious and elegant side dish with couscous, buttery pine nuts and green onions.

Ingredients
- 2 T butter
- 1/4 cup pine nuts
- 1/4 cup sliced green onions
- 1 1/2 cups water
- 1 cup couscous
- salt to taste
Instructions
- In a medium pot over medium heat, melt the butter. Add the pine nuts. Stir around the pine nuts in the butter for 1 minute. Add the green onions and a pinch of salt. Stir around for 1-2 minutes. You want the pine nuts to be golden and the green onions to soften.
- Add the water, and bring to a boil. Once the water is boiling, add the couscous. Stir and remove from heat. Cover with a lid, and let the pot sit for 5 minutes.
- Remove the lid, and fluff the ingredients with a fork. Add more salt if needed.
- Serve and enjoy!
