Couscous With Pine Nuts

A delicious and elegant side dish with couscous, buttery pine nuts and green onions.

Ingredients

  • 2 T butter
  • 1/4 cup pine nuts
  • 1/4 cup sliced green onions
  • 1 1/2 cups water
  • 1 cup couscous
  • salt to taste

Instructions

  • In a medium pot over medium heat, melt the butter. Add the pine nuts. Stir around the pine nuts in the butter for 1 minute. Add the green onions and a pinch of salt. Stir around for 1-2 minutes. You want the pine nuts to be golden and the green onions to soften.
  • Add the water, and bring to a boil. Once the water is boiling, add the couscous. Stir and remove from heat. Cover with a lid, and let the pot sit for 5 minutes.
  • Remove the lid, and fluff the ingredients with a fork. Add more salt if needed.
  • Serve and enjoy!
