Peanut Butter Haystacks are a simple and understated sweet that needs a little more appreciation. No oven required and only four ingredients create these sweet and salty sweets!
My husband requested these Peanut Butter Haystacks. I had never had haystacks, but these easy to make sweets are nostalgic to him. So, when I researched haystacks, I new I had been missing out. There are so many versions of haystacks. Chocolate, Chocolate & Peanut Butter. Marshmallows instead of Peanuts. No Peanuts, so on & so on. I decided to go with the classic recipe today. Butterscotch chips melted with creamy peanut butter. Of course the chow mein noodles and salted peanuts brought it all together.
I kept the chow mein noodles whole, but to make the eating part (the most important part) easier, I recommend breaking up the noodles into smaller pieces.
Also, don’t be tempted to add more peanut butter. The ratio of the butterscotch chips and peanut butter make the haystack stay in stacks instead of end up as hayFLATS!
Ranger had to come and inspect the studio set up!
Oh Ranger. You are a great little helper, but we need to work on leaving the props alone.
Peanut Butter Haystacks
Ingredients
- 1 cup butterscotch chips
- 1/2 cup creamy peanut butter
- 1/2 cup salted peanuts
- 2 cups chow mein noodles
Instructions
- Pour the butterscotch chips and peanut butter in a medium microwave-safe bowl. Cook on high for 20 seconds. Stir the mixture. Cook on high for another 20 seconds & stir. Repeat this process until the butterscotch chip are melted & mixture is smooth. (Mine took a total of 2 minutes.) Alternatively, you can melt the mixture on the stovetop in a double boiler.
- Add the peanuts and noodles to the peanut butter mixture. Gently stir until all of the noodles & peanuts are coated.
- Drop by forkfuls onto waxed paper. Cool until set.
