Parmesan Baked Cauliflower

A delicious and moist whole head of cauliflower coated with mayonnaise, parmesan cheese and garlic.

Ingredients

  • 1 head cauliflower
  • 1/4 cup water
  • 3/4 cup mayonnaise
  • 1/4 freshly grated parmesan cheese
  • 2 cloves garlic minced
  • 2 T fresh chives chopped

Instructions

  • Preheat oven to 400 degrees.
  • Cut the leaves and bottom core from the cauliflower.
  • Place the cauliflower in a shallow microwave-safe baking dish. Add the water in the bottom of the dish. Microwave on high for 8 minutes. Drain.
  • In a small bowl, add the mayonnaise, parmesan cheese and garlic.
  • Cover the head of the cauliflower with the mayonnaise mixture.
  • Place in the oven and bake for 15 to 20 minutes or until the cauliflower is tender and golden brown.
  • Remove from the oven and sprinkle with the chives.
  • Enjoy!
