Three Bean Salad
A protein packed healthy three bean salad.
Servings: 4 -6
- 15- oz can chickpeas rinsed & drained
- 15- oz can cannellini beans rinsed & drained
- 15- oz can navy beans rinsed & drained
- 1/2 red onion diced
- 2 celery stalks diced
- 1 cup fresh parsley chopped
- 1 T chopped fresh chives or fresh dill
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- salt & pepper to taste
