Three Bean Salad

A protein packed healthy three bean salad.

Ingredients

  • 15- oz can chickpeas rinsed & drained
  • 15- oz can cannellini beans rinsed & drained
  • 15- oz can navy beans rinsed & drained
  • 1/2 red onion diced
  • 2 celery stalks diced
  • 1 cup fresh parsley chopped
  • 1 T chopped fresh chives or fresh dill
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • salt & pepper to taste

Instructions

  • Place all of the ingredients in a bowl and stir to combine.
  • Store in an airtight container in the refrigerator for at least 2 hours before serving.
